I had a custom exhaust made inc rear cat delete. What do you think?

I will have to catch up with you some time and experience this exhaust in real life. Never really can tell listening to exhausts on a laptop but that does sound good.

What is it like while you're on the motorway at a steady speed... does it drone at all?

it drones a bit at 2500 to 3000 rpm but you can adjust your speed accordingly

You can probably provide a better sound clip outside the shop with a take off and a drive by video

What Valk said make a video of it outside and accelerating off that will give a you a far better sound recording

its a straight pipe system with one silencer similar to the one below before the tail pipes

Thats very close to the setup I am thinking about. However, I want to put the muffler (Flowmaster HP-2) right where the 2nd set of cats are and bring the two exhausts right before that, then maybe side pipe it out the drivers side.
