I got my 300C on the day you posted the message but I've been crazy busy so I haven't checked the forum for months. I was initially going to wait for the AWD but my 300M's lease was coming up too soon so I went for it.

As others have said, there is an AWD version, comes out in Fall.

As for making slip corners like those in the Speed Channel Test Drive segment, this is what I know.

There are two stages in disabling ESP, stage one is what is available to all drivers, you can just hit the ESP button and most of it goes away but apparently not all of it. You can do the slip cornering maneuvers as show in the video if you know how to handle a 4,000lb vehicle in those maneuvers

Stage two, I've been told is where all the electronic assist is turned off. This apparently requires the handheld programming tablet. This info I got from someone who went on a test track with a Chrysler driver on the 300C.
