Any ideas, suggestions, or just being pointed in the right direction would be greatly appreciated.
It is difficult or impossible to find an extended service plan that provides coverage when things are actually likely to start breaking (like after 120K miles). Most often things go wrong when the car is still new and are replaced under warranty or much later when no one would even consider offering coverage because the cost of the coverage would be so prohibitive that very few would buy it. You're much better off just funding your own savings account to cover any unscheduled repairs.
