I don't think that the fabric on your roadster top would support the weight of the doors very well. But hey, go ahead and try, who am I to say. Maybe if you use enough duct tape anything is possible. Go for it.

You can install Lambo type doors on a coupe. They pivot up but not like a gull wing. Do a search for Lambo doors.
