I purchased EBC "dimpled and slotted rotors, and their red-stuff ceramic pads for my '04 limited.
Braking requires slightly more pedal effort, but there is no fade, no dust, and it feels that it stops faster. I tried the EBC yellow-stuff ceramic pads as well, and they require less pedal effort than stock pads, stop better than the red-stuff slightly, but they have some dust (not as bad as the stock pads, but still).
Also on the flip side, the rotors are great when breaking hard, but when they are cold they have a "warped rotor" vibration to them.... This has seemed to have almost gone away, but it's strange that it happened in the first place. I have the exact same setup on my Touareg and it too had the same vibration for the first month, but it has gone away.
Either way, I would definately recommend upgrading the pads to the EBC's (or Rotex golds...haven't used them personally, but have driven a friends car that has them), and would say that the EBC rotors are great when warmed up... but I think for most of us, the Brembo cross-drilled rotors would be a better option, or just the slotted (non-dimpled) EBC rotors...
My 2 cents...
