You could probably get away with a 10 - 20 degree cooler thermostat. You've got to be careful with that, though, because if you go too cold you can actually overheat the motor because you won't be allowing sufficient time for the coolant to cool in the radiator before being cycled through the engine again.

BTW - what is the stock temperature on the thermostat?
