Mine comes on once in a blue moon, quite often when I'm accelerating and going round a corner - same road whenever it blinks on - I always check the level and it's OK. Seeing as though yours came on as you accelerated maybe the sensor is at the front of the coolant area. If the level is OK I wouldn't worry about it.
