I believe what he's trying to say is......
Where the pedal actuates into the clutch mechanism, there's a number of detents spaced out along it's range. This allows you to adjust the pedal travel. Some people like their clutch to work very early in it's travel, wheras others might like the clutch to not work till it's near the end of it's travel. Basically it's just a way to adjust the pedal "feel" and the height at which it starts to actually disengage the pressure plate from the flywheel. At least that's what I get from his usage of "heel and toe".
It's possible that there's detents on the actual shift linkage as well, allowing you to shorten the throw of the shifter between gears. That might be handy.
Just my speculation though.......
