The term "bye", short for "Good bye" (or, "Good b'ye") evolved from the expression "May God be with you" (or, the old English, "God be with ye"). I'm not certain why an officer of the law would be offended by someone wishing that God be with him, even if he had not had his fill of doughnuts. Although, I have to admit, it is pretty funny.
