If you are going to remove the heads for gaskets, why not cc the the combustion chambers and see how much you can open them up to reduce compression instead of stacking gaskets which sounds crazy. On a boosted engine the head gaskets are usually a weak link, stacking them WOULDN'T seem to improve this.
