I have been running stacked (C3 + 181) for quite a while now. You are correct in stating, "I know it won't handle it for long periods of time" as I did have a problem after an extend run at upper RPM levels over a 30 mile or so run. But around town, light to light driving shouldn't be a problem.
Somewhere there's a list of pulleys and rpm levels. I don't think that stacked C3 + 178 is any worse than running a 185 alone.
A A/F ratio gauge is cheap insurance to ensure you aren't running too lean. Get one.
