First off, welcome to the forum "Big".
I'm am 1 shorter than you, and 5 lbs. lighter (but check back with me after Thanksgiving on that). As PNA mentioned, play around with the seat adjuster and you will probably find the "sweet" spot.
You're pushing the hight limit, at 6'3" but I believe there are a few here on the forum even taller that own coupes.
(Roadsters offer a little more head room, even with the top up).
Choosing between a SRT or a NA car boils down to what's most important to you. If you seldom race the guy next to ya at the traffic lights, you will probably be perfectly satisified with a non-SRT car. On a tight curvy road they're pretty evenly matched.
But if you want to dominate about 95% of the other cars you're likely to come across on any given highway, the SRT should be your choice.
It's really just that simple.
