It can only know that the clutch is not engaged, by the clutch switch, so just tape or fix the clutch switch in the closed position and the computer will always think the clutch is engaged, which should take care of the rev limiter. The only other thing the clutch switch controls is the starter disable, when the clutch is not depressed, so you will just have to remember not to start the car when the clutch is up, because if the car is in gear it will leap forward.
You can (eventually)... I'm in the process of working with MOTEK to do the computer control for the Crossfire, but it will take about 12 months and alot of $ on my part... It will allow you to completely remove the ECU and OEM wiring harness and run the car off the MOTEK system that will give you complete control over all the electronic functions and sensors in the car... But this is racecar stuff and probably out of the price range of the daily driver...
PS: I was talking about the 6,200 RPM limiter in 6th gear... 155 MPH.
