Try to do a burnout and look at the speedometer...

And we've covered the ratio thing a BUNCH on here... Folks running taller tires seemingly have less drama off the line than the shorter tires... but once the shorter tires hook, they accelerate faster (to a point).

That's the reason I'll be going back to a 285/30 versus my 275/35 right now... Shorter sidewalls means I can go lower w/o rubbing, and also get a quicker shot (providing I hook).

The difference is mathematically slight, but I felt an immediate difference when I went from 285/30 to 275/35... And honestly the ride didn't improve enough for me to want the fatter tire.
