From what I am reading, you should be fine.

Each RCA plug will take 2 wires, thus 8 total wires = 4 RCA plugs.

You should solder the solid yellow wire to the center contact of the RCA plug and the striped yellow wire (with the violet) to the outer ring. You should do this twice - once for each set of yellow wires.

Then, you should do the same with the blue & blue/brown wires. Solid blue goes to the center contact and the blue/brown goes to the outer ring.

This will use all eight wires and leave you with 4 female RCA plugs.
