Have you ever tried to pull fuses 17 & 18? These are for the ESP.
Seemed last time at the track even though I'd push the ESP button off - could leave the line higher but would start to spin and engine would bog.

You'll have to start pulling fuses. The purpose of that switch is to allow some wheel spin so you can free the car from mud/snow. ESP will always kick in and spoil the fun if it detects the car is starting to slide sideways.
