I believe the extra O ring goes between the filter stalk and the metal filter cap. They're almost always left over because the stalk and the cap are rarely separated, although they can be.
I did my last oil change with an extractor pulling it out of the dipstick tube. No belly pan, no gorilla-fitted drain plug. Easy.
