I'm 74" (6ft 2in.) and weigh in the 250 range, and I fit just fine in my 2004 Coupe.

It will need to be a limited with adjustable seats. I have the seat adjusted all the way down and all the way back against the bulkhead. I fit perfectly, pedals and clutch, arm length etc. is great.

As for head room, even with a hat on, I don't touch the headliner in a natural seating position. But If I hit a bump while driving, I may bounce a bit and just graze the head liner. To prevent that, you will get into the habit for keeping your head forward slightly of your neck, "hunching" slightly. This is a common technique used by tall guys in small sporty cars, it's not uncomfortable and you will never touch the headliner even on the hardest roads.
