Kinda sounds like bad gas to me.
Bad gas or water would take some time to get to the injectors, it would not show up immediately.
It could be low gas pressure. Accelerator pedal or throttle body sensor, but it would be odd for them to suddenly appear.
Where was the vacuum leak? How many miles on the car?
