Need Some Interior Opinions on a Full Custom Interior job...
Im about to take my car in for a full interior restoration and was thinking of going the 2 tone route. I was thinking the dark brown and black look like in this pic:

that's pretty sweet looking, especially on a Ferrari... how would you do the plastic/silver pieces in the Crossfire? wrapped in leather? painted brown?

My recommendation -- get some samples.
The brown you have pictured is more of a peanut butter color... I've seen it in person on a local Ferrari and it's gorgeous, but not quite dark enough to work with the Aero Blue IMO. Porsche and Mercedes both are using a "mocha" or "chocolate" leather in their cars... certain makes have different grain characteristics as well. Infiniti comes to mind as another manufacturer that uses dark brown leather... but I'd hazard to say that grain of leather would be just as expensive.
If you're looking to do an interior overhaul, there's no sense in half-assing it. Definitely wrap the dash panels in leather... a dye job will simply rub off, and nothing looks more horrid than a light interior with the dark plastic showing through at wear points. That "distressed" look only works well with kitchen cabinets.
Karl (SRT SIX) got his leather seats dyed, and was quite happy with the results. So you could save some $$$ there, as the leather will absorb the dye much better than the plastic. Same for the door panels... the center portion should absorb the dye fairly well. So really, the only areas you'll have to wrap are the panels that constitute the "T" of the dash/console.
Some custom billet pieces would look rather bespoke. While you're playing with the brown leather, you may even use some of the pieces to have a custom shifter boot created... I'd leave the center stack (waterfall) the OEM silver... all attempts to customize/wrap that have fallen short.

I've seen great results with the Hydrographics but you would have to pull the dash and console parts off to have them "Dipped". They supposedly wear as good as being painted and you have a great range of choices as to what textures will work.

Another option how about aero blue for the silver console, aero blue door panels, aero blue suede for the middle seats, and should I do a Black headliner and aero blue A pillars and trunk hatch or would that be too much?

lol im actually going to be using it as a show car. I have some sponsors lined up. Want to hold onto it for awhile.

I would be careful about blue on the plastic interior pieces.. you don't want to look like a high schooler who went crazy with a spray can on his Honda...
Once you start getting multiple hues of leather inside... the trim needs to be as uncomplicated as possible.
