Don't leave out the possibility, (remote) of a weaping head gasket or cracked head. Odds are unless the car was severly overheated before your ownership this would not be the case.
Also, speaking from personal experience the Mopar thermostats in the V8's in 04 and 05 were defective, the one in my Hemi was replaced at 22K after coming apart, that is a common thread in the LX forums
