The more I learn about newer computerized cars, the more I hate them - when it comes to modifing! For a stock daily driver they are great! However, having to try to circumvent all of the electronics to make a good car great and fun to drive - by knowledgable drivers is a pain in the ****! Unless there is a Bowtie or Blue Oval on the engine and associated electronics it is very difficult indeed.
Anyway, back on topic, if you gutted/removed the motors/gears on the TB, but left the sensors (TPS) intact, could it not work as a manual TB with a linkage hooked up? If you did it right you might even be able to return it back to stock if you ever wanted to.

I've been thinking about that too, I wish I knew more about how all the stuff in our car actually works though.. I've been having trouble finding technical information on how the electronics work and interact. Anybody have any good websites or anything?
