Hmm, not really noticed myself.

Sounds odd to me, have you tried adjusting the dimmer switch to see if it can be brightened?
3. Stereo vibrates the drivers side exterior mirror.
ooo, dealer should investigate that, maybe there is something loose. You don't want to be driving one day and find the mirror falls off! Mind you, how loud is the radio when this happens?
4. The engine makes an odd rattle sound at idle after driving sometimes.
This has been posted before and I think there is a TSB on it. Something to do with the lifters. Dealer should fix.
5. Excessive wind noise from the drivers window at 65+ MPH. Really bad at 110.
There is a TSB on this already. Dealer should fix. They did on mine.
6. Radio/CD, bass/treble settings reset on their own sometimes.
Get a radio swap out, dealer should fix. Write to Chrysler customer care if the dealer won't fix these things. They will soon get their act together.
7. Can you increase the length of time for the entry lighting to stay on?
Don't think so, why would you want to do this anyway?
8. Gas gauge red light does not illuminate.
The red light at the bottom of the gauge isn't supposed to light. There is a warning light when the tank is low, but this is different to the red one at the bottom of the gauge.
9. The wing comes up at about 65 mph. The manual notes not to drive the vehicle above 58 or 60 mph without the wing being up. Can the wing be reprogrammed to come up at 60 mph and go down at 20 mph?
Don't think so, must be a typo in the manual I would say.
Some of the things seem minor but your dealer should still fix them. I had a problem where my ash-tray light didn't work. My dealer was happy to look at it for me. I actually fixed it myself in the end as I couldn't be assed to go all the way there just for that. But still, delaers and warranty service are there to fix problems. 1/7/8/9 are not problems so fair enough they won't look at those, but the others are.
