I also installed a new thermostat when I changed the coolant in my '04 last month. I avoided the water spillage problem by taking the thermostat valve out of the old housing and installing the (now empty) housing back on the engine with a used radiator hose attached. This let me flush the system with the spillover discharged away from the engine. Makes the job a bit neater. As has been mentioned, Zerex G-05 coolant with distilled water is the only way to go.
