With me, it was ANYTIME I demanded the car perform like a sports car. You are describing, almost exactly, what my car was doing. It was kinda fun, - I could make my CEL come on at will.
Now, if you have, say, only 30,000 miles on yours, I'd not suspect plugs. I'd think that low fuel pressure could do this as well, I guess. Or even lousy gas.
