As to oil quantity, there are a few reasons to increase oil quantity:

1) Additional oil provides a 'heat sink buffer', that is, the extra quantity can help with temperature swings that occur during short-term harder driving, keeping oil temp more stable
2) Additional oil provides more dilution, that is, you can go longer between changes because contamination is more diluted (so the marketing department can claim more miles per change)
3) The engine can run on six and 1/2 quarts, so IF the engine were to use or loose any oil, you have no real urgency to add oil. (Check your owner's manual carefully, it specifies 8 1/2 and that you can go 2 quarts low; of course, I only do 8 quart changes because the last 1/2 quart can set off the hi oil alarm)
