The Oil Level & Clock Icons you see are associated with the onboard electronic oil level sensing system in the car. Chances are the oil level sensor has gone bad. If your oil level shows good on the dipstick, don't worry about it. See attached pages out of Owners Manual. Your FSS probably reset properly if you remember seeing the 7000 mileage indication. Electronics on these cars are a PITA!

If you haven't already, go to onehundred80's Crossfire Library thread & download a copy of the Service Manual for these cars. The 2005 version gets you info for the Coupe & Roadster; both NA & SRT-6 models.
