1) This can be, and probably is, a bad or stuck door ajar switch. That' about all the help I can give you, get started looking things over.
2) All three roadsters Iv'e owned SNAP loudly when the bow latch releases, I don't see this as a problem.
3) This is a common issue, you have got to get in there and look over the linkage, sounds to me like it has come apart.

Red NA: The convertible top does nothing when I push the button - no lights, no beep, nothing. All the other switches in the console seem to work, like the heated seats, the spoiler, etc. When I open the latch for the top, the windows roll down, but nothing happens when I push the button.
The fact the windows go down tells us: The TCM is OK, the latch retainer switch is OK and the CAN BUS between the TCM and BCM is working fine. I'd try resyncing the top. To resync the top, put the top down manually then back up manually three times. Follow the procedures in my video below, be sure you have the top tool and a hex key wrench. Do the procedure COMPLETELY, as described, three times. Engine must be running when you do this. THen try the button, this clears the TCM's confusion quite often.

Oh yeah, and the red car's engine fan blows like a hurricane. I can easily hear it from inside the car. My blue car doesn't do this. I assume this is a problem?
It is. If the fan runs all the time at high speed, there are two causes to choose from:
1) The Fan Control Module (FCM) is bad.
2) Communications between the ECU and FCM have broken down and the FCM is in "Emergency Mode" to protect your engine. The little "radiator light" on the left end of the instrument panel will be on in this case.
Either the bidirectional data wire from FCM to ECU has broken or a connection has opened, the FCM is bad or the ECU is bad. I'd replace the FCM first.
