I assume you have a SRT6, since this type of throttle response is related to the failure of the original water/fluid pumps that cool down the superchargers on the SRT6 models. The purpose of the pump is to cool down the supercharger, avoiding failure, this is heat related, causing the limp mode to avoid total failure of the supercharger/engine. The original pumps (Bosch) had a part number ending in 03. The revised Bosch pump's number is, 0 392 022 010.
This problem started in 2006/2007 and was discussed at that time.
When you turn off your engine and permit it to sit for a while, the engine cools down and the pump will work, until the next time it overheats and the pump fails again.
Buy a new pump.
