I just picked up an 04 crossfire with 81,000 miles on it. It needs a little cosmetic work but i wanted a project. I'm changing all the fluids but i don't see a min or full on the coolant reservoir.

Welcome.
Looking into the reservoir you will see at the back a plastic ‘blade’, the fluid should be about level with the top of the ‘blade’.
