Welcome to the forum and thank you for posting in the right area!

Twice the car has stalled on me and would not crank over after it stalls. After it sits a little while it does start back up but the check engine light then stays on for approximately 2-3 days, during which time it starts and runs fine.
Telling us the CEL comes on without reading the codes and telling us what they are is not going to help.

But the "would not crank over" is a sign of a bad engine control relay in the RCM. Next time, if it won't crank (I am getting so tired of repeating this over and over) just relax the key to "ON" and sit there. If, in 45 seconds, the engine cooling fan is running like a turbine, your RCM is at fault. Put your spare RCM in, and drive home, then send the bad one to DJ for reworking.

If you have no spare RCM, order one today. EVERYONE (except for idiots) should have a spare RCM and spare Crank Sensor in the trunk. IT is as simple as that.
