Hello everyone, I realize that Crossfires were only made from 2004 to 2008 but i'm curious if there is any one year that is more sought after than others and if so...why?
A subjective response. My own is one of the three crossfires I own. The 2007 Special Editions are the best. I have no regrets in buying it and would absolutely do it again. They have SRT style wheels, are resale red, and are convertibles. BTW, earlier year Crossfires with the medium gray interior are subject to the paint peeling of interior trim. I also have a Limited 2004 coupe with that problem, and now a 2006 limited coupe with only 4,700 miles which has a sticky feel to just the medium gray interior trim paint. I'm very careful with it so it does not peel.
A more serious response, from a collector perspective, would be the low volume SRT6 versions with the added horse power. I initially avoided them because of more maintenance issues on the engine and costlier parts. I also didn't care for the big wing on the back. Not everyone cares or needs the added horse power to enjoy their Crossfire, and when you are looking for possible future appreciation you then avoid driving the car which would devalue it with more miles and wear and tear. I've since softened/changed my opinion and would like to have an 06 SRT6 convertible if the right opportunity came up, but would not be disappointed if it didn't.
You didn't say why you were asking. There are many reasons to buy a Crossfire, and reasons why to enjoy them. Unfortunately, Daimler Chrysler made many mistakes with the Crossfire which resulted in bad press. Fortunately for us we have been able to buy great cars at very good prices.
Simple answer is the low volume SRT6 roadsters, followed by SRT coupes. These are mostly 2005s and a few 2006s. With 50% more hp than the other Crossfires these are keepers.
Limited roadsters of any year, mileage and condition being important, bottom of the line models would be the base models and the so called Special Edition roadsters which are essentially stripped Limited roadster models with a bit of bling.

My preference would be a 2007 or 2008 model. These don't have the "sticky key" issue that requires fixing. That's offset by these years having Takata airbags, which is under a safety recall to have it replaced on the Driver's Side. The airbag recall is easy to verify whether it has been done; not so much with the "sticky key" issue. Some of the later year 2006 models also don't have the "sticky key" issue, but I don't know where the production numbers start with this change in 2006. While the "sticky key" issue isn't really a big deal to correct, I just don't like the thought of having to take apart the lower dash on the Driver's Side to execute the fix. That's just me.
Otherwise, I would go with feedback from onehunder80 regarding his comments pertaining to SRT-6 models. These just are the rarest of all Crossfires and finding a low mileage version still in OEM configuration (I'm not a fan of "modding" up the Crossfire) would be one to hold onto.
These are cars to drive & enjoy. They are not currently a collector car, by no stretch of the imagination, and may never become one - my $.02. But I can speak for most members here that we all get a thrill driving these cars and having passersby tell us how great looking these cars are when they see us with them. I get lots of positive feedback at every car show, cruise-in, whatever type of gathering whenever I show up with my car. I like driving something not everyone sees everyday. Makes me sorta special!!

You are going to get responses that will probably include every year, model, and color. Everyone has his or her favorite. None of them are going to replace your 401K savings or increase your net worth. Most everyone on this forum owns a Crossfire, even with its' issues, because we like them. Buy the model and color that you like best. My preference is a Limited coupe in Blaze Red Pearl with an automatic. Is this car the most valuable? No, but it is the Crossfire that I prefer.

At one time or another I have owned a 2004, three SRT-6's, and a 2006 roadster. I have driven many from all years. The cars are low production, almost hand built. To be honest, same model same year, I see there are subtle differences in how they drive. Especially from different owners who treated them differently with tires, Mods and such.
Over the six years of production, with the exception of the SRT version, there really is not much difference in the years. Cosmetically, most casual observers cannot distinguish any difference whatsoever. The Crossfire logo on the trunk of 2004 model is lower than the following years. The Special Edition has fancy wheels and blocked out fog lamps. If you are buying, chose low miles, number of owners, and condition over years.

Crossfire lettering across rear hatch was raised in 2005 so they could place the SRT-6 emblem below. They never lowered the lettering after the SRT-6 series ended. I learned of this at a Chrysler Crossfire gathering at a Carlisle Chrysler National show some years back.
