Bluetooth headsets?
I have tried numerous Bluetooth hands free devices but none do the job well. Either people can't hear me when the top is down, or I can't hear. The only thing that I've found that really works well is a Shure wire deadset - that really wokrs.
Has anybody had any luck?

Best is the Jawbone -- uses technology they developed for military applications -- I've been on the freeway at 70mph, windows down, truck next to me, and people think I'm in the office. Find them on eBay and at AT&T Wireless among others.
Interesting. Reviews on Buy.com and Amazon weren't really good for that one on wind noise. I see you've got a coupe - I'm interested in any Roadster owners with one that works... big difference with the top down.
I had the Shure wired boom mic with my old phone and it was an absolutely awesome combination. I could hear and be heard with the top down at 80+ mph - the only drawback was that it was wired and had that long boom on it so it looked a bit "old tech". But the damn thing just worked so beautifully at noise cancelling.
I got a new phone in January and the interface is different, requiring an adapter to use little mini-jack devices like that Shure boom mic. No big deal, or so I thought. Something about that interface attenuates the sound level so dramatically that I can't get any decent volume on my end no matter how I adjust things. Others can hear me just fine, but I can't hear them very well even under the best of conditions.
I'm now using a Jawbone Bluetooth with the new phone and it's great - up to about 40~45mph with the top down, at which point it gets real noisy for people on the other end of the call and it can't deliver the volume I need to overcome the ambient wind noise. Great headset otherwise, but it has its limitations. I have yet to find a Bluetooth headset that does a better job of noise cancellation though, so for now 40~45mph is my "talk speed" limit with the top down.

Shure makes the same headpiece with a Nokia plug, as well. Don't know what that would do for you. I used a Logitech bluetooth and it worked decently with the top up, but once the top went down - faggeddaboudit!
Still looking....

I have an old (3 years old, maybe older) Jabra model bluetooth earpiece, and most of the time people don't have any problems hearing me (if the earpiece is on my left ear, not my right) or me hearing them. Although if they can't hear me, I roll up the windows and they hear me just fine (even with the top down).
Note that this is all talking about going between 70-80 mph on the interstate.

Have you considered the Motorola T305 Hands Free or the BlueAnt Wireless Supertooth Light?

Well, I just ordered one of these- reviews (where I could find them) were good and I like the boom mic. Just got a new phone, too - the new Samsung Instinct - close to an iPhone on Sprint network... so far I'm likin' it!

I've used their earphones and earplugs for many years. I may have to get one of those Bluetooth sets!
Well I've had the EtyBlu for about a week now and ready for a review. First thing - with the boom mic - anyone I've spoken to says it sounds like I'm in the room with them - even with the top down at 80.
+1
The unit has three ways of attaching to the ear. The first is to use a flanged in-ear nub that comes in a couple sizes. If you get one that fits you are golden! I couldn't get either one to work.

They also have a foam insert with the compressed type of foam. You squeeze it and then stick it in your ear and it swells up to hold it in place. Better, but not perfect.
+1/2
By adding the included ear clip it works much better. Volume is better than other earpieces have been in the past - about as good as I think I'll get in a Bluetooth...
The other slight detraction, it can only recharge from a USB cable - there is no adapter. I believe, theough, that it is set up to allow for software updates if they become available.
All in all, it was worth the $129 cost for it - no more wires!

As for headsets, the original jawbone has now been replaced with a jawbone 2 - which reviewed really well, but I couldn't get a great fit with it so I returned it. The other highly rated one I'm interested in trying, but haven't yet, is the new BlueAnt Z9i, which replaces their old model, the z9.
So to comply with the new CA law, I purchased a BlueAnt Supertooth 3 hands free device. It clips on the visor, and seems to work fine. It works with voice commands, which is kind of cool. It does pick up ambient noise, but I've had the window down and carried on converstations - though not at fwy speeds. I don't usually have the windows down on the freeway anyway. So for now this is working well, so I'm in no rush to try a different device.
