Start with putting in 8, check it, if it needs a little more... put a little more in!
I have put 8 Litres in my car which is a little more than 8qts and it brought the level up to the top of the full line.

Becareful. Do not overfill; a little less is OK.

Anybody know why most of the filter kits come w/ an extra O-Ring?

Lol this actually really confused me, I looked over everything a couple of times to find where the other O ring goes.

The extras are a prize to wear on your fingers after the change.

I think some other Mercedes engines that use the same oil filter, have one more O-Ring on their bayonets, than Crossfires have.
I never put more than 8 qts of oil in my car. Some people have had problems with the car reading it as being "over filled" when using 8.5 qts.
Besides, it's better for it to be a little under filled than it is to be over filled.

Always put in 8 quarts and go for a drive.
Check the oil level a little while after you have stopped and see if you still need more.
Mine is always right on the full mark with only 8 quarts with every oil and oil filter change.
