the hardest part is, you will need electricity under the sink, and most likely there isn't any. I had to run a line over and install an electrical box and plug for the the heater. The rest is just like installing a faucet, only easier. Good luck...

Actually, since it's her kitchen sink if she has a disposal there will be power.
I've never installed one but seen them and they look pretty easy to install.
usually they run that wire direct to disposal, and it is on a switch. You would still have to run a wire that is live all the time, not just on the switch...

As the other fellow told you, they're easy to install but you need a hole in the sink or have to drill one.
If you like you can use the dish washer anti-siphon hole and hook the 2 ends together and clamp them so they don't leak!
Electricity under the sink is ALWAYS available at least in homes built in the last 5~10 years for the garbage disposal-dish washer, etc. If you have a garbage disposal in your sink it,s plugged into a switched outlet so DON"T USE THE SWITCHED OUTLET! Rather, put a multi-tap unit into the non switched outlet and plug in the hot water dispenser.
(You can usually tell a switched outlet because it's installed upside down, ie, the ground stud is up instead of down like thew other outlets!)
Hope this helps!
